The Olympics are almost here! It’s such an exciting time, as the whole world tunes in to watch one event at the same time. It’s hard not to feel more connected to the world’s countries as our greatest athletes compete side by side. So how about expanding that connection by trying out some of the different cuisines the world has to offer? And in an effort to be the best that we can be, let’s keep those options on the healthy side, just like our athletes.
USA – Sometimes distinguishing an American dish can be difficult, considering that we’re influenced by so many cultures and cuisines. They don’t call us the melting pot for nothing. One thing that pops into my mind, though, is beef. Americans love beef. But to keep it on the lighter side why not enjoy it in a goat cheese & steak salad. Pairing the delicious meat and creamy cheese with lots of healthy greens and a vinaigrette can make it a guilt-free meal.
Russia – I couldn’t write this article without including the country that’s hosting the games. One of Eastern Europe’s best known foods has got to be Borscht soup. Being a beet-based soup, it has numerous health benefits including high levels of folate, fiber, magnesium and vitamin C. Pair it with some Golubtsys, or stuffed cabbage, and you have a complete meal.
Japan – One word: Sushi. Not only can sushi be a great way to enjoy fresh fish and all the health-benefits they contain, but it can also be a great time to make some healthy choices for the earth. Try choosing rolls that include fish that are sustainably raised or caught. Great choices include salmon and yellowfin.
Korea – I love Korea because it was in this country that Kimchi was created. Kimchi is a mixture of cabbage and carrots with spices that has been allowed to ferment (like pickles). Like all fermented foods, kimchi improves digestion health, increases immunity and restores good bacteria in your gut.
Try topping some Korean Chicken Japchae (a chicken and vegetable stir fry) with a big serving of Kimchi for a tasty and healthy meal.
